The lardo (bacon fat) of Colonnata

Colonnata is an ancient village, that is situated in the middle of the carrarese marble region. This town is famous because of the production of one of the most delicate product obtained from the pig meat: the lardo (bacon fat).

The lardo of Colonnata due its exceptional tastiness to the mellowing, a process that is fruit of ancient tradition and secular experience. The lardo, that is obtained from the fat of the back of the pig, is placed in a basin dug in a marble block ("conca"), where it will be covered with salt, pepper, garlic, sage and other spices and will remain here at least for six months. After this period of time, the lardo has been dried by the salt and perfumed and flavoured by spices.

Thus the lardo of Colonnata joins the typical marble of the zone to the cooking: this process will create a fragrant and delicate product, very good and tasty when it is served with hot bread. The second Sunday after the 15th of August, in Colonnata there is the "Sagra del lardo", that attracts thousands of tourists.
