The Biscotti of Prato, also called Cantuccini or Cantucci, are one of the greater confectionery products of the city of Prato.
The recipe of these biscuits is ancient: the first we know is a manuscript, dated to 18th century, conserved in the archives of Prato. The recipe was then readapted in the 19th century, and since then it is still the same, thus becoming the traditional recipe that distinguishes the original biscuits of Prato from the other ones. The mixture is composed exclusively by flour, sugar, eggs, almonds and pine nuts.
They are a dessert, and they are usually served together with a bottle of vinsanto from Tuscany. The vinsanto is an ancient white wine with an amber colour, that is usually used with the dessert because of its sweet and aromatic taste.
