Garfagnana's chestnuts

In Tuscany the chestnuts are collected everywhere, but in Garfagnana they are used in order to produce the typical flour of Neccio (neccio is a word of the Tuscany dialect that indicates the chestnuts).

The flour of Neccio, currently destined to the confectionery production, has been for many centuries one of the base food for the maintenance of the rural populations of the Garfagnana.

The typical products of the zone are numerous, but the most important are the bread of the Garfagnana, called simply "neccio", prepared with flour of chestnuts, water and salt, the polenta of neccio, the manfregoli (prepared cooking the flour of neccio with milk) and castagnaccio (a cake prepared with flour of neccio, water, oil, walnuts and pine nuts).
